Eggs Baked in Tomatoes with Potatoes au Gratin

Few things are more exhilarating than driving down a completely empty road in the middle of nowhere.
I need to relax…
I made oatmeal chocolate chip cookies at the cabin in celebration of Mike’s birthday (that large one was just for him). And they were amazing, so easy and incredibly delicious. Recipe below.
Ingredients:
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 cup oats
- 2 sticks (1 cup) butter, softened
- 1 1/2 cups firmly packed brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla
- 2 cups semisweet chocolate chips (or as much as you want, really)
Preheat oven to 350°F.
Whisk together flour, baking soda, baking powder, salt, and oats. In another bowl with an electric mixer cream butter and sugars until light and fluffy. Beat in eggs, 1 at a time, beating well after each addition, and beat in vanilla. Beat in flour mixture and stir in chocolate chips.
Drop dough in rounded tablespoon onto baking sheets (12 per sheet).
Bake cookies for 12-15 minutes.
I can’t sleep so, umm, here’s this — the pinnacle of my jumping in photos career. Even if it is blurry, I’m without a doubt the highest one for a change.
Just another rainy day in NYC. Surely Mexican food will make me feel better.
